Quality is the watchword of the new Brew American Gastropub. Everything they serve must be of the highest caliber. Now that Brew has opened in Chesterfield, local connoisseurs have found “an oasis in the desert”, in the words of bartender James Vance – an oasis of beer.
When Matt and Karen Verdisco set out to open a new restaurant, they were going to focus on wine. “Then,” says Vance, “they realized that craft beer was the way of the future.” Thus Brew came into being, offering beer aficionados a selection of thirty beers on tap and sixty bottled – there’s no run-of-the-mill canned beer here. The syrups for their mixed drinks are made from scratch. In fact, Brew’s freezer is used only for ice-cream: meat is purchased fresh and hamburger made right in the kitchen.
“The goal is to get the best of everything, especially if it’s local,” says enthusiastically. To this end, Brew uses top-shelf local products like AgriBerry produce, Gelati Celesti hand-made ice cream, Lamplighter coffees, and Carytown Tea. Having the best of the best is a matter of personal pride at Brew. “Ralph Waldo Emerson once said, ‘Nothing brings you peace like the triumph of principles’”, Vance recites reverently. “I believe in that, and I’m overjoyed to have met Matt and Karen, who believe in that too.”
